This course is meant for Diploma students only for 1&1/2 year. It deals about food production dept. only. This course teaches about the basic culinary skill for commercial food production operation. It deals with all types of Indian, Chinese and continental cuisines. Here they also learn about the larder section which is the part of kitchen, where different kind of vegetables and meats cuts including different fruits and vegetable carvings are being practised. This course gives a better opportunity for passed out students in different fields for their career.

Diploma courses combine theory, practical and industrial experience to prepare the students for entry or supervisory-level positions in the diverse and challenging food service industry.

After the completion of 1-year teaching course, all the students have to undergo training in food–production areas of hotels only for 6 months. They learn the 1st hand experience of food preparation and presentation under the guidance of experienced staff over there. They are supposed to work in all the 3 shifts in rotation from time to time.
